Determination of five amides in food contact materials by GC/MS

Abstract

A method based on gas chromatography-mass spectrometry (GC/MS) was developed and validated for qualitative determination of five amides in food contact materials. The five amides are acrylamide, methacrylamide, caprolactam, oleamide and stearamide. The linear detection ranges of the method were 5-100 μg/mL and the recoveries were 79.3 %-101.6 %. Detection limits of five amides were 0.08-1.0 μg/mL and the relative standard deviations (RSDs) were in the range of 2.5 -10.0%.
