- Abstract
Inulin is fructose polimer that hard digested with human digestion but can fermented by Bifidobacteriabecome Short Chain Fattic Acid (SCFA) like lactic acid, propionate and butirate. It using for improve intestinal villi work and decrease bad cholesterol levels.Yam (Pachyrrhizuserozus) is a part of leguminous plants from tropical America that rich of inulin. The aim of this researchisknowingthe relation effect of variations time storage yam tuber to cholesterol levels and duodenum lipase activity. This research used was The Post Test Only Control Group. In changes in four groups of experimental animals which using Rattus Norvegicus. The groups are: a control group (K) with regular food and others using food mixed yam with variation days saving (1 day (P1), 14 days (P2), and 28 days (P3)). After 50 days, duodenal and blood of them are takento know the activity lipase duodenum and the cholesterol levels,. The result of this research are: 1. Blood cholesterol levels K, P1, P2, and P3 are 68.40, 51.80, 67, 81.80 (mg / dL).2 Lipase activity K, P1, P2, and P3 are 0:07, 0:05, 0:11, 0:13 (IU / mL). There is a relation between variations time of saving tuber toanimal lipase and blood cholesterol levels.
